A dedicated home brewer of beer for decades, Chuck was pondering his future in a sushi restaurant…and the answer was in front of him.

Craft saké!

He spent a couple of years learning how to brew saké at home, then leased a warehouse space on Bosstick Boulevard in San Marcos and built a brewery in it…or rather, built a winery and a brewery side-by-side because he also loves brewing craft beer, and California regulations declare that saké is a wine and requires a winery license instead of a brewery license.

Chuck and the team at Kuracali have been making beer and saké since January 2015 and serving tasters, pours, and growlers of both out of the two tiny tasting rooms.
